I have seen a Youtube presentation of Obsidian where you could change color of text; but I can’t find it again: which version of Obsidian contains this feature - or is it a plugin?

The current beta version of Obsidian includes a new feature to choose colors of highlights. Obsidian 1.14.0 Desktop (Early access) - Obsidian.

If you mean to color the text itself, you can use CSS snippets to color certain kinds of text (CSS snippets - Obsidian Help), or use HTML and CSS to color any text.

I believe there are several plugins to make coloring any text easier.
