Im on a German Mac keyboard and trying to find the keyboard combination for two square brackets [[ . Opt-5 gets me to one open and one closed bracket [], two-times Opt-5 results in [[]] offering me a list of documents. I can’t seem to find a way to type just two open square brackets.
In Obsidian “terms” does [[]] get the same result as [[ ?
This seems to work exactly as intended. Your cursor should be right in the middle of those four brackets, making it possible to write a filename inbetween or pick one of your already existing files.

You can deactivate this behaviour in “settings → editor”.
