I’m unable to type accented characters (áàé…) using the new properties editor.
I use a 2018 Macbook Pro with the second public beta of Sonoma and a Spanish keyboard.
I can use accented characters outside the YAML area.
Properties seems to work fine in my Mac Mini with macOS Monterey 12.6.8.
Is there any reason why you didn’t use the bug report template?
How do you write accented letters with the Spanish keyboard? Can you post a screen recording of this happening in the sandbox vault?
In a Spanish keyboard the accent is a soft key. You type the accent and then the letter. For instance, you type ´ and then you type a to obtain á (á).
By the way, I observed the problem with accented characters appears in a scrollable text area (a multiline text field). When the text is short and the UI uses a text field, I can write accented characters.
I think the problem may be a LF. If the text is long, but it does not have any LF (Cmd + Return), it seems to work fine.
Uhm, I can’t even ctrl-return on windows.

Community plugins: for bugs, please first try updating all your plugins to latest. If still not fixed, please try to make the issue happen in the Sandbox Vault or disable community plugins.
Ok now go in the sandbox vault (command palette > open sandbox vault), and see if it happens there.
On Windows you can use Shift-Return, but it seems to work fine.
The same problem on Ubuntu using Shift-Return to create a LF.
Can you post a screen recording of this happening the sandbox vault? Thank you.
