For me, on Obsidian Mobile (iOS 15.5) the same occurs, but something tells me it is the phone automatically formatting it since the same occurs in other apps. On Obsidian Desktop, on Windows 10, two dashes remain as two dashes and are not converted. This used to bother me, but I checked a grammar book and apparently two dashes are perfectly acceptable substitute for an em dash.

Echo-ing what i-d-as said: check that your OS or keyboard or some other app isn’t “autocorrecting” unhelpfully for you.
turns out it was the latex suite plugin which was doing the coversions. easy fix.
