Have you hidden too much? Is that what you’re saying?
In any case, doing Ctrl/Cmd P should reveal the command palette allowing you to search and execute any command available in Obsidian. And if you do Ctrl/Cmd , you should get the Settings dialog, which in turn should allow you to go in and unhide the elements you see that you do need to have visible.
If you enjoy the look of it currently, you might also consider either to go all out and enable hotkeys for the various actions you’re missing, and/or using Commander plugin or similar to add icons to the toolbars (if any left) for the commands you’re wanting. On a similar note, you could even consider doing a QuickAdd multi choice to allow you for a single hotkey for the most wanted commands of your choice.
( Update, I just saw you’re on ipad, and this doesn’t really apply: If you don’t like the look, and have inadvertently removed all of settings and so on, and you don’t get back to a normal state using the advise above, you might need to go to <vault>/.obsidian/plugins and move away the plugin folder, obisidan-hider, it self. This should be considered a last resort, and I don’t think you should need to go this far. )
