How do include '#' in tag name, for example creating a tag for anything related to C#

Create a tag for notes related to C# language
I tried #C# or #C\#, neither works

Or do you guys just write #C_Sharp ?

You don’t — you use a substitute like the one you suggested. (Maybe check what the hashtag is on Twitter.)

For music, you can have a tag that includes the ‘music sharp sign ♯’ (U+266F).
