If anyone experiences the same problem:

It seems that there are plugins that even after uninstalled cause obsidian files to corrupt.

I just deleted all Obsidian files from my computer (the ones under appdata/roam etc) and Obsidian now behaves as expected. After I installed the “Readitlater” plugin I had the same spikes in CPU usage, even after deleting the plugin and all the files related to it. This forced me to delete everything again and to make a fresh Obsidian install.
