I don’t see the “Show frontmatter” item in Options → Editor → Display section (but see it on one of the how-to video).

There has been a change to calling the frontmatter section for properties, so you’ll find the similar options at Settings > Editor > Properties in document, and can choose between; Visible, Hidden and Source. The latter of these would show them as YAML.
There is also a new core plugin called Properties view which can enable two different views in the right side pane. And that is the all properties view, or the properties of the current file.
