Is there an option or plugin that lets me turn off formatting when I paste something into Obsidian I copied from another app?
I guess I posted too soon. Settings > Editor > “Auto convert HTML” does the trick.

If you do not want to disable “Auto convert HTML” completely, you can also paste w/out formatting:
shift + ctrl/cmd + V
