Obsidian’s autocompletion has become essential to the way my brain works. Unfortunately, when I’m putting tags in metadata as a list, they don’t autocomplete. So, I start a new tag item on the list with a #
and then select the autocompletion. (Actually, I also have a have a Keyboard Maestro shortcut that that replaces the #
with - SPACE
.)

Excuse my ignorance, do you mean using another software to implement this process?
Yes, for the last bit, you’ll need Keyboard Maestro, which is a separate (macOS) app. @ryanjamurphy put together a whole list of things you can do with it:
