When the checkbox is checked, text becomes grayed-out. How to make it strike-through instead?

This sounds like a typical theme choice, so which theme are you using? Are you able to change theme options through the Style settings plugin?
If you can’t change it through Style settings, you either need to add a CSS snippet doing it for you, or change to a theme which does it by itself.

Yes, you are correct, it turned out to be related to theme Things
Unfortunately, there are no settings available in Style Settings for this strike-through
I tried it with CSS but its did not work for me

I decided to man-up and found solution in the screenshot below:
Do remember that if you change the actual theme.css file, your changes will be removed in the next update of the theme.
Instead you should rather place your modification into a CSS snippet in the snippets folder of your vault, which will allow it to live for ever long you want to have that change available.

I think I fixed it the right way now
