Menu items are context-sensitive – they are only available when a relevant object has focus. Greyed-out text usually means that the cursor is in a place where the greyed-out feature can’t be used. For example, if the file explorer has focus, some or all substitutions won’t be available. If the cursor is moved into the body of a file, the substitutions should then be available, and the menu items should not be greyed out. This should be true system-wide on a Mac … it is not a specific quirk of Obsidian.
