Text in note disappears, pressing Undo brings it back

My problem is exactly the same as the one documented in The content in my file disappeared every 15 minutes, except that my folders are being synced to Dropbox, not iCloud.

As Dropbox is my backup tech, I’d really prefer obviously to NOT have to have my files in a local folder that I then have to remember to copy over. Is there a solution for this?

You don’t need a manual local copy.
As explained in the troubleshooting steps, you need to make sure that your sync solution (Dropbox) keeps the real files local (not a fake link to them).
So make sure dropbox is configured properly.

Also make sure you are not using BOTH Dropbox and iCloud.
