It only modifies time stamps if you actually press keys (type) in a note (well, depending on the settings).
I just have lots of dataview queries with mtime, and like to see whenever I touched a file. I also do edits in VScode, that’s why the plugin I’m using is so good. I’m not sure what OBS Sync does that the mtime gets a new timestamp.
However, in my current setup it’s all good. iCloud plus remote git should do the job.
