I have installed Pandoc but it just doesn’t work. (On a M2 MacBook Air running Tahoe, which hasn’t gotten officially released yet.)
Searching “epub”, “ebook”, and “export” (each separately) in Settings > Community Plugins > Browse should answer if there’s an alternative to Pandoc.
If you provide more info about your Pandoc problem, maybe someone can help with it.
If your notes don’t use Obsidian-specific markup, you may be able to use some other app to convert (for example Ulysses, which is paid but has a nice graphical settings panel for export to epub; tho if you use Ulysses you’ll want to work on a copy of your notes in case it messes with your Markdown).
@CavinTeffid: I don’t know how I didn’ think to just, you know, search community plug-ins! thank you! in fact, I found that I even had such a plug-in installed, called Enhancing Export. (perhaps because I only just created an account, I couldn’t post a direct link, though.)
