Interesting to read your experience with Evernote, as it closely resembles mine. The reason, I believe, for the sort of particular experience is because Evernote nurtures it: the user is encouraged to dump anything and everything in EN, and they have the insolence to call it your second brain.
On the forum I always had the impression there was a p*ssing contest as to who had the highest number of notes, as if that means anything.
Leaving EN also confronted me me with lock-in, but at that stage I was still prepared to ignore it when I found an interesting alternative in the form of CherryTree. It is a lot better, but there is still the lock-in effect.
Changing computer a few times over the last few years really drove that lock-in effect home with me, so I switched to markdown. what a joy. A joy hugely augmented when I discovered Obsidian.
