I have a question about the link to Daily Note feature. When I add a date to a note and it creates a link to the Daily Note for that same date, I expected that the Daily Note would have a backlink to the original note. But it doesn’t. Is there a setting that I am missing? Or am I misunderstanding the purpose of this feature?
This is not a link that exists in your note. It is a link generated by the properties display, that only exists while the note is displayed. It is therefore not picked up as a backlink to a daily note.
Some may consider this behavior better. It leaves control to the user on whether a note should appear as a backlink or not.
The “link icon” next to the date is just a “shortcut” to open/create the corresponding daily note (if you have the core daily note plugin enabled), nothing more

It doesn’t create a link between the note with the date property and a corresponding daily note, it just provides you with a quick way to open/create a relevant daily note (AFAIK 
, at least)
date type of keys are meant for date… Links (between notes) within Properties live in text or list type of keys
