I am trying to figure out how to have notes displayed in Linked Mentions when they’re being linked to in the properties section (not the actual body of the note).

I am not even sure what I should be trying.
A date record is just a record. So, you should add the [[name to your other note]] in your current note, to see a connection between both.

Try to use the local graph too, to understand and build connections between notes.
